Does anybody know what a low temp thermostats degree is and what should be writen on the stat itself

They sometimes have the open/close temperatures stamped on there somewhere.

I have made a test yesterday , I took the thermostat from the local Renault dealer , written 83 ° C on it and my low temperature from K-tec . I put them in a saucepan , boil it and realised that my Renault one was opening far before the K-Tec one . Strange isn't it ?
