Give it time, im sure most pedals on 5's are pretty stiff in comparison to modern cars, especially the clutch!! Soon enough you will be used to it!!
Although I have heard of a soft pedal conversion for the clutch - not sure how it works though!!

The clutch is fairly stiff, if you think it's too stiff it might be worth checking the cable isn't showing any signs of fraying. It's not uncommon for them to snap.
The throttle should be quite loose. Again check the cable but also check the throttle mech works smoothly on the carb.
The throttle also moves the accelerator pump jet on the carb, it's a rod held in with a small plastic grommit. I've known them break up and fall out, so check that moves smoothly as well. Last thing you want is the throttle jammed open.

sorted the throttle it was a sciezed choke cable and stiff as fook return spring

What clutch do you have in the car?

If you have the Valeo clutch in there (Volvo 480 turbo one) they are always litle shiffer and snappy compared to a standard one. Only way to loose that feeling is to fit extended clutch arm or get use to it
